Oven Roasted Snapper Parcels
When you’ve got such a beautiful fresh fish, sometimes the best thing you can do is keep it simple. Preheat your oven to 180 degrees. Cut aluminium foil to a size big enough to wrap each fillet in. Lightly brush each piece of aluminium foil with olive oil then place a Snapper fillet on it. Drizzle each fillet with fresh lemon juice, fresh parsley, anchovies or capers (optional), and season lightly with salt and pepper. Fold and scrunch the foil around each fillet to secure as a parcel. Bake for around 10-12 minutes then serve with a simple green salad or steamed baby potatoes and greens.
Baked Snapper with Garlic and Herbs
This is another simple recipe that uses butter, garlic, seasoned breadcrumbs, and dried parmesan cheese, as a tasty crunchy topping. Place the snapper fillets in a greased baking dish. In a saucepan, melt 60g of butter then add 1 crushed garlic clove, 1 teaspoon of Worcestershire sauce, pinch of pepper, and 2 tablespoons of finely chopped fresh parsley. Once sautéed, add 4 tablespoons of breadcrumbs and 2 tablespoons of dried parmesan cheese. Mix well then spoon breadcrumb mixture over fillets and bake at 180 degrees for 15 minutes. The fish should flake easily when cooked.
