A Fish Supper Recipe - Gold Coast

Deep Sea Fishing = Fish Supper

Recipe 1 – Seaprobe Fish Cakes

Fish cakes are a great meal for young and old, and they’re even better if you catch your fish fresh and you catch it yourself.

Ingredients:

  • Fillet your fish, and add approximately 500g
  • Add a splash of lemon and some lemon zest
  • 2 tablespoons of olive oil
  • chop half an onion, either red or white according to taste
  • 1 tablespoon of mayonnaise
  • Beat one free-range egg lightly
  • Half a teaspoon of paprika
  • Breadcrumbs

Method

Step 1 – Preheat the oven to 180 degrees or 160 degrees for a fan forced oven.

Step 2 – Place your fish on a baking paper lined oven tray and add your lemon zest, and salt and pepper to taste. Drizzle oil over the fish and seasoning and place in the oven for 10-12 minutes.

Step 3 – Whist your fish is cooking toss your chopped onion, mayonnaise, beaten egg, lemon juice, paprika and some breadcrumb for extra crunch into a bowl and mix well; add salt and pepper to taste.

Step 4 – Get your fish out of the oven and break into pieces and add to the mixture and mix well.

Step 5 – Roll the mixture into balls and place on baking paper and place in the fridge for an hour.

Step 6 – Heat some oil and sauté for 4 minutes or until browned.

Step 7 – Serve with homemade hot chips or baby boiled potatoes and some tartar sauce.

Ingredients

  • 600 – 700grams of filleted Barramundi
  • Cajun Seasoning to taste (approx. 1 tablespoon)
  • Salad mixture of your choice
  • Jalapenos for an extra KICK!
  • Limes
  • Tortillas
  • Chopped pineapple
  • A blob of sour cream, salsa and or mayonnaise

Method

Step 1 – Heat oil in a pan.

Step 2 – Slice your barramundi into small 1 – 2-inch pieces and smoother with Cajun seasoning and oil.

Step 3 – Add your Cajun fish to the pan and cook for 2 – 3 minutes until it is cooked all the way through, repeat until all the fish is cooked.

Step 4 – Mix your salad, or have a variety of bowls laid out so you can serve yourself.

Step 5 – Heat to tortillas until soft in the microwave.

Step 5 – Dish up your fish into your tortillas, add salad, throw in some pineapple, squeeze some lime, and add a dollop of sauce for an easy and delicious meal. Add jalapenos if you like a bit of a kick.
